Tijdens het productieproces van witte chocolade worden de donkergekleurde vaste bestanddelen van de cacaoboon gescheiden van het vet (cacaoboter), net als bij melk- en pure chocolade, maar die bestanddelen worden later niet weer samengevoegd.
